Whats the difference in the platform in smartphones?

Whats the difference in the platform in smartphones? like symbian S60 or windows mobile or palm OS? is one better than the others?

1. there all the same really just the odd diffrence ie: the nokia 6680 runs on symbian s60 but the n70 basicaly the same phone runs a diffrent os it does however change on older phones
